Ironically, on the same day I professed my love here for Baja Fresh, I received an email back from the company’s customer service department:

Dear lbotp,

Thank you for your interest in Baja Fresh.
It is always a pleasure to receive feedback from our customers, and we're
so happy to hear that you enjoy our FRESH Mexican concept.  At this time
we do not have plans to open in the Champaign-Urbana, IL area.
We do appreciate your suggestion, and a copy of your message has been
forwarded to our Real Estate Executives for their review.
